Restaurant Gastrobar Casino Marbella welcomes the season with the launch of its new menu. On this occasion, the chef Agustin Roman offers a selection of dishes with a renewed perspective, crafted using the finest local ingredients. Highlighting Mediterranean influence, the sea takes on an undeniable leading role in all its creations.
The new gastronomic proposal reflects the chef’s sensibility in its creations, reinterpreting each dish in a more avant-garde and contemporary version.
To begin the experience in a light and harmonious way, the culinary journey starts with the Ajoblanco with melon, basil and lime. A dish that was initially intended to be a salmorejo and it ended up becoming a delicious ajoblanco that perfectly combines the sweetness of melon with the acidity of lime, while also offering a subtle floral aroma thanks to the fusion of manzanilla sherry and basil. The thin slices of cured tuna introduce the necessary saline note, achieving a delicate balance among all its components.
For those who enjoy an essential classic in Málaga’s taverns, the Warm potato salad with cod and chili peppers becomes a must-stop. This interpretation of the traditional Russian salad is inspired by a former colleague of Agustín, whose version stood out for its creaminess. The chef has preserved that essence by incorporating the traditional ingredients along with cod and piparras to give it a more personal and contemporary character. Served at room temperature to avoid interfering with the cooking of the cod, it stands out as one of the season’s signature dishes.
After the starters, the Skate loin in brown butter with vegetables pickles promises to position itself as a favorite among the main courses. The juiciness of the fish, enhanced by the tangy touch of pickles and the distinctive flavor of brown butter, turns this composition into a true delicacy. Despite its technical complexity and the precision it requires, Agustín has managed to find the perfect formula to work with this delicate product and elevate it to a higher level.
The sweet side of this culinary creation comes with Hazelnuts, meringue and lime. A reinvented dessert that stands out for its exquisite hazelnut praline, which, together with the meringue and a citrus hint of lime, offers a light and refreshing finish.
We will have to wait until next June 17th to enjoy the new specialties at Restaurant Gastrobar Casino Marbella, opened everyday from 08:00 pm to 02:00 am . With the start of the summer season, the establishment will adjust its opening hours and, starting from July 1st, it will open from 09:00 pm to 02:30 am.
